Breakfast Quiche Cups

For those of you who want a quick and easy (and delicious) breakfast food that you can make ahead of time, these are great.  Forgive my lack of exact measurements.  You really don’t need any.  And as far as ingredients go, you can substitute most of them with pretty much whatever you like (think mushrooms, turkey bacon bits, etc.)

Ingredients:
  • 3/4 cup liquid egg substitute or 3 large eggs or 3 /4 cup egg whites
  • 1 package frozen chopped spinach (10 oz.)
  • Shredded reduced-fat cheese (any flavor).  Cheese cubes work well, too. 
  • Diced red or green peppers or mixture of both
  • Diced onions
  • Hot sauce or other spices (optional)
Preparation:

1. Heat oven to 350F

2. Line 12 cup muffin pan with foil baking cups, spray the cups with the cooking spray. Be sure not to omit this step, or the quiches will stick to the baking cups.

3. Thaw and drain spinach (I microwave mine so it’s not at all frozen when I use it).

4. Mix the spinach, eggs or egg substitute, cheese, peppers, onions, hot pepper sauce, etc. in a bowl.

5. Fill the foil cups with the mixture (you can also “build” the quiches as you go — putting different veggies and cheese right into the foil baking cups and then when you’re done, just add the liquid eggs). 

6. Bake at 350F or 20 minutes. You’ll know they’re done when a knife inserted in the middle comes out clean.

7. Remove from foil baking cups to serve.

Makes 12 mini-quiches

  2. I think I tried these once when my mom and dad were on the phase 1 of SB diet. But I don’t remember how good were they, I need to make them soon.
